Peppermint & Chocolate Mug Brownie

imageYou are either going to love me for this one or hate me. These are way to easy to make, the clean up is minimal, make great gifts (the dry ingredients in a mason jar) and well they are super tasty!  If you want to go vegan on these you can substitute coconut oil for the butter but increase to 2.5-3 TBSP coconut oil and add a pinch of salt.

If you want to make it “slightly” healthier, reduce sugar and flour to 2 TBSP each and add 1 tsp. ground Flax Seed and increase water to 2.5 TBSP.

Personally, I skip the healthy stuff and go for the sugar laden glory. It’s fun to have a treat sometimes.

If you use peppermint essential oil, you must use a therapeutic grade oil.  You do not want to ingest a fragrance oil! I use Young Living Essential Oils and recommend their oils for their quality.  If you are pregnant or nursing do not use peppermint oil. Also, this is not for children under the age of 2. (Most kids would want plain chocolate anyway).


Peppermint & Chocolate  Mug Brownie Mix

 Wet Ingredients

  • 2 TBSP Butter (I often use yogurt butter)
  • 2 TBSP hot water
  • ¼ Tsp Vanilla Extract
  • Peppermint Essential oil

Dry Mix

  • 2 TBSP Cocoa Powder
  • 3 TBSP Organic Raw Sugar
  • 3 TBSP Flour (I use Oat Flour, Wheat or Almond Flour)
  • 1/4 tsp Cinnamon
  • Dark Chocolate Chips (optional) 1 Tsp. miniature chips works best
  • In a medium sized mug: Melt butter in microwave for 20-30 seconds until fully melted, add water and vanilla extract.
  • Whisk in the combined dry ingredients a spoonful at a time and thoroughly.
  • Add 1 drop Peppermint essential oil for a minty chocolate flavor. Trust me, it’s amazing if you like any type of mint chocolate.
  • Microwave for 55-60 seconds. I prefer 55 seconds so it’ s more moist. Allow to cool for one minute.
  • Top with ice cream or whipped cream if desired.

The Dry Mix makes a great holiday gift when given in a Mason Jar. The mason jar below was decorated with cupcake liners, mod podge glue and some paper cutouts. Lid spray painted red (just the top), and tied with twine. A very easy craft!
